Winter Salad with Maple Candied Walnuts and Maple Balsamic Dressing
This salad is so easy to whip together because we bought the roasted zucchini and roasted sweet potatoes from a salad bar so we didn’t need to actually cook anything!
- Spring mix
- 1 cup shredded beets
- 2 cups roasted zucchini
- 1 cup roasted sweet potatoes
- 1/2 cup maple candied walnuts (see recipe below)
- 1/4 cup dried cranberries
- 1/4 cup goat cheese
Maple Balsamic Dressing:
- 3 T olive oil
- 2 T balsamic vinegar
- 1 T maple syrup
Add ingredients to a measuring cup & whisk with a fork. Add salt & pepper to taste.
Maple Candied Walnuts:
- 1 cup walnut pieces
- 1/2 T melted coconut oil or olive oil
- 1.5 T maple syrup
- 1/4 t vanilla
- 1/2 t cinnamon
- Pinch of sea salt
Mix all ingredients in a bowl. Place on a baking sheet lined with foil and spray with coconut oil spray. Bake at 400 degrees for 5 minutes in toaster oven. Check to make sure these don’t burn!
